How to Win at Thanksgiving

Whether you want to admit it or not, Thanksgiving is the most judgy of all judgemental dinners. Everyone you feed will be constantly comparing your food to everyone else’s. Is your turkey drier? Are your mashed potatoes lumpier? But fear not, I am here to give you the secret to winning — caramelize everything!

3 Tips to Win at Thanksgiving

    Mashed potatoes become infinitely better with the addition of roasted garlic. This can be started a few days in advance, simply roast a few heads of garlic, squeeze out the golden cloves, and store them in your fridge. Then whip them into your potatoes along with salt, pepper, butter, and cream.

    Gravy is also better with the addition of caramelized onions, simply mix them with some pan drippings to start your roux. These can also be made a few days before, and while you are at it, make your gravy a few days in advance so that you have one less thing to worry about on game day.

    Lastly, make a big batch of brown butter, and use it wherever you would use butter. You could do this today and stash it in your fridge. Then toss with steamed vegetables, use it to baste your turkey, add it to your mashed potatoes, mix it in with your sweet potato casserole. Everything is made better when you add brown butter.
